Ingredients

6 bone-in, skin-on chicken thighs

1 large lemon (zested and juiced)

6 garlic cloves, minced

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for some heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Marinade: In a large mixing bowl, combine the lemon zest, lemon juice, minced garlic, olive oil, chopped rosemary, thyme, salt, black pepper, and red pepper flakes (if using). Whisk until well combined.

Marinate the Chicken: Pat the chicken thighs dry with paper towels. Add them to the marinade and toss to coat thoroughly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for better flavor).

Arrange in Baking Dish: Transfer the marinated chicken thighs to a large baking dish, skin side up, pouring any remaining marinade on top.

Roast the Chicken: Place the baking dish in the preheated oven and roast for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. Use a meat thermometer to check the internal temperature, which should reach 165°F (75°C).

Broil for Extra Crispiness: For an extra crispy skin, switch to broil for the last 3-5 minutes of cooking. Keep a close eye to prevent burning.

Garnish and Serve: Once done, remove from the oven and let the chicken rest for 5 minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Pair these flavorful chicken thighs with a side of roasted vegetables, rice, or a fresh salad for a complete meal!
