4 large whole wheat tortillas

1 cup baby spinach leaves

1 medium cucumber, thinly sliced

1 large carrot, grated

1 bell pepper (red, yellow, or orange), thinly sliced

½ cup red cabbage, shredded

¼ cup fresh parsley, chopped

1 tablespoon olive oil

Salt and pepper to taste

Optional: Feta cheese or a sprinkle of chili flakes for heat

Prepare the veggies: Wash and prepare all the vegetables. Slice the cucumber and bell pepper, grate the carrot, and shred the red cabbage. Place the veggies in a mixing bowl.
