Lemon Dill Fish Cakes

1 pound fresh white fish (like cod or tilapia), cooked and flaked

1 cup cooked potatoes, mashed

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup finely chopped fresh dill

1 tablespoon lemon zest

2 tablespoons lemon juice

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Dijon mustard

Salt and pepper, to taste

Olive oil, for frying

Instructions
 

Prepare the Fish Mixture: In a large mixing bowl, combine the flaked fish, mashed potatoes, breadcrumbs, dill, lemon zest, lemon juice, chopped onion, and minced garlic. Mix until well combined.

    Bind the Mixture: Add the egg and Dijon mustard to the mixture. Season with salt and pepper to taste. Stir everything together until the mixture holds together but is not too wet.

      Form the Cakes: Using your hands, take a portion of the mixture and shape it into patties, about 3 inches in diameter and 1 inch thick. Just before frying, coat each patty with additional breadcrumbs for extra crunch.

        Heat the Oil: In a large skillet, heat olive oil over medium heat. You’ll want enough oil to coat the bottom of the pan well.

          Fry the Fish Cakes: Once the oil is hot, carefully add the fish cakes (in batches if necessary to avoid overcrowding). Fry for about 4-5 minutes on each side or until golden brown and crispy.

            Drain and Serve: Remove the fish cakes from the pan onto a plate lined with paper towels to drain excess oil.

              Garnish and Enjoy: Serve hot with a dollop of tartar sauce or a drizzle of additional lemon juice and garnish with fresh dill or salad greens.
