Lemon Chickpea Snap Wraps

1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Zest and juice of 1 large lemon

2 tablespoons tahini

1 clove garlic, minced

1 cup fresh spinach leaves

1 cup diced cucumber

1 cup halved cherry tomatoes

1 avocado, sliced

4 whole grain wraps or tortillas

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chickpeas: In a medium mixing bowl, add the rinsed chickpeas. Drizzle with olive oil, then sprinkle in the ground cumin, smoked paprika, salt, and pepper. Toss well to coat the chickpeas evenly with the seasonings.

    Roast the Chickpeas: Preheat your oven to 400°F (200°C). Spread the seasoned chickpeas onto a baking sheet in a single layer. Roast for about 20-25 minutes, or until they are crispy and golden, stirring halfway through to ensure even cooking.

      Make the Lemon Tahini Sauce: In a small bowl, whisk together the tahini, minced garlic, lemon zest, and lemon juice. If the sauce is too thick, add a little water until it reaches your desired consistency. Taste and adjust salt as needed.

        Prepare the Wraps: While the chickpeas are roasting, lay out your whole grain wraps or tortillas on a clean surface.

          Assemble the Wraps: On each wrap, layer a handful of fresh spinach leaves, followed by the diced cucumber and halved cherry tomatoes. Next, add a generous portion of the roasted chickpeas and sliced avocado. Drizzle with the lemon tahini sauce.
