Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup whole milk

Zest of 2 large lemons

½ cup fresh lemon juice (about 2-3 lemons)

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp vanilla extract

Optional: Powdered sugar for dusting

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes) using an electric mixer.

Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next. Stir in the vanilla extract along with the lemon zest.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the creamed butter mixture, alternating with the milk and lemon juice. Begin and end with the dry mix, mixing until just combined. Be careful not to overmix!

Pour into Pan: Gently pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. The edges will start to turn golden brown.

Cool the Cake: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Decorate (Optional): If desired, dust the cooled cake with powdered sugar for a touch of sweetness or drizzle with a simple lemon glaze made from powdered sugar and lemon juice.

Serve and Enjoy: Slice the cake and serve it with fresh berries or a dollop of whipped cream, if desired. Enjoy your zesty treat!
