Lemon Basil Pesto Pasta

2 cups fresh basil leaves, packed

1/2 cup pine nuts (toasted)

2 cloves garlic, peeled

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

12 ounces of your favorite pasta (spaghetti or linguine recommended)

Optional: cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Prepare the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, garlic, Parmesan cheese, lemon juice, and lemon zest. Pulse until the ingredients are coarsely chopped.

      Emulsify the Pesto: With the food processor running, gradually pour in the extra virgin olive oil and blend until the mixture is smooth and creamy. Scrape down the sides as needed. Taste and season with salt and freshly ground black pepper.

        Combine Pasta and Pesto: In a mixing bowl, combine the drained pasta with the pesto. If the mixture appears thick, add a little reserved pasta water, one tablespoon at a time, until you reach your desired consistency.

          Serve: Transfer the lemon basil pesto pasta to serving plates. Optionally, top with halved cherry tomatoes for color and extra flavor. Garnish with more grated Parmesan cheese and a drizzle of olive oil if desired.
