1 pound ground turkey

1 medium sweet potato, peeled and diced into small cubes

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream or Greek yogurt

Optional toppings: avocado slices, cilantro, lime wedges

Instructions
 

Prepare the Sweet Potato: In a medium saucepan, bring water to a boil. Add the diced sweet potatoes and cook for about 8-10 minutes until tender. Drain and set aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and break it up with a spatula. Cook until the turkey is browned, about 5-7 minutes.

      Season the Mixture: Once the turkey is browned, add cooked sweet potatoes to the skillet. Sprinkle in the chili powder, cumin, garlic powder, salt, and pepper. Stir well to mix all the flavors and continue to cook for another 2-3 minutes. Remove from heat.

        Warm the Tortillas: In another pan or directly on the stove, warm the tortillas one at a time until they are soft and pliable, about 30 seconds on each side. Alternatively, you can wrap them in a damp paper towel and heat them in the microwave for 30 seconds.
