1 medium head of cauliflower, cut into florets

8 ounces elbow macaroni (or any small pasta)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2% works best)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika (optional)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

1/4 cup bread crumbs (optional, for added crunch)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Steam the Cauliflower: In a steamer basket over boiling water, steam the cauliflower florets for about 5-7 minutes until tender. Alternatively, you can microwave the cauliflower with a splash of water in a covered dish for about 4-5 minutes until soft. Blend until smooth.

      Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the flour, whisking continuously for about 1 minute to form a roux. Gradually add the milk, whisking to eliminate lumps. Bring the mixture to a simmer and cook until it thickens, approximately 5-7 minutes.

        Add Flavorings: Stir in the garlic powder, onion powder, and smoked paprika (if using). Remove the saucepan from the heat. Add the shredded cheddar and mozzarella cheeses, stirring until melted and smooth.

          Combine: In a large mixing bowl, combine the cooked macaroni, steamed cauliflower puree, and cheese sauce. Season with salt and pepper to taste. Mix until everything is evenly coated.

            Transfer to Baking Dish: Pour the cheesy mixture into a greased 9x13 inch baking dish. If desired, sprinkle the top with grated Parmesan cheese and bread crumbs for added texture.

              Bake (Optional): Preheat your oven to 350°F (175°C). Bake the mac and cheese for about 20-25 minutes, until bubbly and golden on top. If you prefer a creamy mac and cheese, you can skip this step and serve it directly from the stove!

                Serve: Allow to cool for a few minutes before serving. This dish pairs well with a side of steamed veggies or a fresh salad.
