Ingredients

For the crust:

1 ½ cups graham cracker crumbs

⅓ cup sugar

½ cup unsalted butter, melted

A pinch of salt

For the filling:

4 large egg yolks

1 can (14 ounces) sweetened condensed milk

½ cup fresh key lime juice (or regular lime juice)

Zest of 2 limes (preferably key limes)

For the topping:

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

Lime slices and zest for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and a pinch of salt. Stir in the melted butter until the mixture resembles wet sand. Press firmly into the bottom and up the sides of a 9-inch pie pan. Bake for about 8-10 minutes until lightly golden. Remove and let cool.

Make the Filling: In a separate bowl, whisk the egg yolks until they are thick and pale. Gradually add the sweetened condensed milk, mixing well. Then, whisk in the key lime juice and lime zest until fully combined.

Combine and Bake: Pour the filling into the cooled crust and smooth the top. Bake in the preheated oven for 15 minutes. Remove and let it cool at room temperature before refrigerating for at least 3 hours (or overnight for best results).

Prepare the Whipped Topping: In a chilled mixing bowl, beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, beating until stiff peaks form.

Assemble the Pie: Once the pie is chilled, top with the freshly whipped cream, spreading it evenly across the pie. Garnish with lime slices and additional lime zest for a vibrant finish.

Serve: Slice into pieces and serve chilled for a refreshingly zesty dessert!
