Ingredients

2 cups cooked shredded chicken

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup crumbled cooked bacon (about 6 slices)

1/4 cup ranch dressing

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 to 10 low-carb tortillas (such as almond flour or coconut flour tortillas)

Olive oil or cooking spray (for frying)

Instructions

In a large bowl, combine the cooked shredded chicken, softened cream cheese, shredded cheddar cheese, crumbled bacon, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are combined and creamy.

Preheat your oven to 400°F (200°C) if you prefer to bake your taquitos. Line a baking sheet with parchment paper for easy cleanup.

If using low-carb tortillas, warm them in a microwave for 15-20 seconds to make them pliable and easier to roll.

Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla, spreading it down the center.

Tightly roll the tortilla around the filling, placing the seam side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.

For baking, mist the tops of the taquitos with olive oil or cooking spray to help them crisp up. Bake for 20-25 minutes, until they are golden brown and crispy. Alternatively, if you prefer frying, heat a skillet over medium heat with a little oil and fry the taquitos in batches until they are golden and crispy on all sides.

Remove from the oven or skillet and let cool for a few minutes. Serve with additional ranch dressing or your favorite low-carb dipping sauce.
