Sautéing is a crucial step in developing rich flavors for your Creamy Keto Broccoli Cheddar Soup. By carefully cooking the aromatics—such as onions and garlic—over medium heat, you unlock their natural sweetness and enhance the soup's overall taste. The key is to ensure that the aromatics are softened and translucent, which typically takes about 3-5 minutes. This gentle cooking method allows the flavors to meld together, forming a robust base for your soup. Stir occasionally to prevent burning, and if you notice the garlic starting to brown, reduce the heat slightly.

Ingredients

4 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese (plus more for serving)

1 cup heavy cream

4 cups chicken or vegetable broth (low sodium)

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon paprika (optional)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon olive oil or butter

1 tablespoon apple cider vinegar

Optional garnishes: chopped chives or spring onions

Instructions

Prepare the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes, then remove and place them in an ice bath to stop cooking. Drain and set aside.

Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

Combine Broth: Pour in the chicken or vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.

Add Broccoli: Add the blanched broccoli to the pot and let it simmer for about 10 minutes, allowing the flavors to meld.

Blend the Mixture: Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the mixture and leave the rest intact.

Incorporate Cream and Cheese: Gradually whisk in the heavy cream, then stir in the shredded cheddar cheese until melted and well combined.

Season to Taste: Add paprika, salt, and black pepper. Taste and adjust seasoning as desired. Add the apple cider vinegar for an extra tang if you like.

Serve: Ladle the hot soup into bowls, topping each with additional shredded cheddar cheese and a sprinkle of chopped chives or spring onions if using. Enjoy!
