Japanese Steakhouse Hibachi Zucchini

2 medium zucchinis, sliced into half-moons

1 tablespoon vegetable oil

1 tablespoon soy sauce

1 tablespoon garlic, minced

1 teaspoon ginger, freshly grated

1 teaspoon sesame oil

1 teaspoon rice vinegar

1 tablespoon butter

1 tablespoon fresh scallions, chopped

Sesame seeds for garnish

Salt and pepper, to taste

Instructions
 

Prepare the Zucchini: Rinse the zucchinis under cold water and slice them into half-moon shapes, about ½ inch thick. Set aside.

    Heat the Pan: In a large skillet or a hibachi grill, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and grated ginger to the hot oil. Sauté for about 30 seconds until fragrant, making sure not to burn them.

        Cook the Zucchini: Add the sliced zucchini to the skillet. Stir-fry for 3-4 minutes until they start to soften but still retain some crunch.

          Season the Zucchini: Pour in the soy sauce, sesame oil, and rice vinegar. Mix well to evenly coat the zucchini. Continue to stir-fry for another 2 minutes.

            Add Butter and Toss: Lower the heat to medium. Add the butter to the skillet and toss the zucchini until it’s melted and all the zucchini pieces have absorbed the buttery flavor.

              Garnish: Remove from heat, then sprinkle the chopped scallions and sesame seeds over the zucchini. Season with salt and pepper to taste.

                Serve Hot: Transfer the hibachi zucchini to a serving dish and serve immediately as a delightful side to your favorite grilled meats or as a delicious vegetarian dish.
