Ingredients

For the crust:

2 cups all-purpose flour

1 cup grated Parmesan cheese

1 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, melted

2 large eggs

For the filling:

1 cup sliced salami

1 cup sliced ham

1 cup sliced pepperoni

1 cup provolone cheese, shredded

1/2 cup black olives, sliced

1/2 cup roasted red peppers, chopped

1/2 cup diced tomatoes (drained)

1 tsp Italian seasoning

1/4 tsp red pepper flakes (optional for heat)

For the topping:

1/2 cup shredded mozzarella cheese

1 tbsp fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Make the crust: In a mixing bowl, combine the flour, grated Parmesan cheese, baking powder, and salt. In a separate bowl, whisk together the melted butter and eggs until well combined. Gradually add the wet ingredients to the dry and mix until a soft dough forms.

Press the crust in the pan: Take about two-thirds of the dough and press it evenly into the bottom of the prepared baking pan. Make sure to cover the bottom completely.

Prepare the filling: In a large bowl, combine the sliced salami, ham, pepperoni, provolone cheese, olives, roasted red peppers, diced tomatoes, Italian seasoning, and red pepper flakes if using. Mix well to combine all ingredients.

Layer the filling: Spread the meat and cheese mixture evenly over the crust in the baking pan, ensuring it covers the surface well.

Top with remaining dough: Take the remaining dough and flatten it out between two sheets of parchment paper to create an even layer. Carefully place this on top of the filling, covering it completely.

Add the mozzarella: Sprinkle the shredded mozzarella cheese over the top of the dough for a cheesy finish.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the cheese is bubbly.

Cool and slice: Once baked, remove from the oven and allow to cool for about 10 minutes. Use a sharp knife to cut into squares.

Serve: Garnish with fresh chopped parsley before serving. These squares are delicious warm or at room temperature!
