6 large flour tortillas (or spinach tortillas for added color)

8 oz fresh mozzarella cheese, sliced

2 cups fresh spinach leaves

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, chopped

3 tablespoons balsamic glaze

Salt and pepper, to taste

Olive oil, for drizzling
