Ingredients

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup shredded carrots

1 cup baby spinach

1 cup sliced bell peppers (assorted colors)

1 cup cucumber, thinly sliced

1 cup cooked chicken breast, shredded (optional)

1/2 cup feta cheese, crumbled (optional)

Salt and pepper to taste

Olive oil (for drizzling)

4 large whole wheat tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/2 cup black beans, rinsed and drained

1/2 cup corn (canned or frozen, thawed)

1 cup spinach, chopped

1/2 cup diced tomatoes

1 tsp cumin

1/2 tsp chili powder

Olive oil or cooking spray

Salsa, avocado, or sour cream (for serving)

2 cups Greek yogurt (plain or flavored)

2 cups granola

2 cups mixed berries (strawberries, blueberries, raspberries)

1 banana, sliced

Honey or maple syrup (optional, for sweetness)

Mint leaves (for garnish, optional)

Instructions

Begin by laying out the whole wheat tortillas on a clean, flat surface or cutting board.

Spread a generous layer of hummus on each tortilla, leaving a small border around the edges.

Layer the shredded carrots, baby spinach, sliced bell peppers, cucumber, and shredded chicken (if using) evenly over the hummus.

If adding feta cheese, sprinkle it evenly across the layers. Season with salt, pepper, and a light drizzle of olive oil for added flavor.

Starting from one edge of the tortilla, carefully roll it tightly into a wrap, ensuring the fillings stay inside.

Once rolled, slice the wrap in half diagonally to showcase the colorful filling.

Repeat with remaining tortillas and ingredients.

To make packing easier, wrap each half in parchment paper or plastic wrap.

                      Cheesy Veggie Quesadillas 🧀🌽

In a mixing bowl, combine the shredded cheese, black beans, corn, spinach, diced tomatoes, cumin, and chili powder. Mix well to combine.

Heat a non-stick skillet over medium heat and add a small drizzle of olive oil or spray with cooking spray.

Place one tortilla in the skillet and sprinkle half of the cheese and veggie mixture evenly over it.

Top with a second tortilla, pressing down gently. Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.

Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side.

Once both sides are golden brown and the cheese is gooey, remove from heat and let it cool for a minute before slicing into wedges.

Serve with salsa, avocado, or sour cream on the side.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 2 quesadillas (4 wedges each)

In a clear cup or jar, start with a layer of Greek yogurt at the bottom (about 1/4 cup).

Add a layer of granola (about 2 tablespoons) on top of the yogurt.

Next, layer a mix of berries (about 1/4 cup) and a few banana slices.

Repeat the layers until you reach the top of the cup, ending with a layer of yogurt followed by berries for decoration.

Drizzle with honey or maple syrup if desired, and add a mint leaf on top for garnish.
