Hot Honey Tortellini Pasta Salad

12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

½ cup red onion, thinly sliced

½ cup cucumber, diced

¼ cup Kalamata olives, pitted and halved

¼ cup feta cheese, crumbled

3 tablespoons hot honey (or regular honey with a pinch of crushed red pepper)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let cool.

    Prepare the Dressing: In a small mixing bowl, whisk together the hot honey, olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.

      Combine the Salad: In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, baby spinach, red onion, cucumber, Kalamata olives, and feta cheese. Drizzle the dressing over the salad and toss gently until all ingredients are well-coated.
