4 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

Fresh thyme leaves or parsley for garnish (optional)

Prepare the Marinade: In a medium bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and black pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the honey mustard marinade over the chicken, ensuring each piece is evenly coated. Seal the bag (or cover the dish) and refrigerate for at least 1 hour, ideally 2-4 hours for maximum flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, prepare a two-zone heat (direct and indirect).

        Grill the Chicken: Remove the chicken from the marinade, letting any excess drip off. Discard the marinade. Place the thighs skin-side down on the grill. Cook for about 6-8 minutes, or until the skin is crispy and golden.

          Flip and Finish Grilling: Flip the chicken thighs and reduce the heat to medium. Continue to grill for an additional 10-15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

            Rest and Serve: Remove the chicken thighs from the grill and let them rest for about 5 minutes. This helps retain the juices. Garnish with fresh thyme leaves or parsley if desired, and serve hot with your favorite sides.
