Ingredients

4 salmon fillets (6 ounces each)

1/4 cup honey

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon soy sauce

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, lemon juice, soy sauce, salt, and black pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a zip-top bag or a shallow dish. Pour half of the marinade over the salmon, reserving the other half for later. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Bake the Salmon: Line a baking sheet with parchment paper for easy cleanup. Place the marinated salmon fillets skin-side down on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

Glaze the Salmon: While the salmon is baking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat, then reduce the heat to low and let it cook for about 5 minutes, or until slightly thickened.

Serve: Once the salmon is cooked, drizzle the thickened marinade over the fillets. Garnish with fresh parsley and serve with lemon wedges on the side.
