4 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

3 garlic cloves, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lemon (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Make the Marinade: In a medium bowl, combine the honey, Dijon mustard, olive oil, minced garlic, thyme, smoked paprika, salt, black pepper, and lemon zest (if using). Whisk everything together until well mixed.

      Prepare the Chicken: Pat the chicken thighs dry with paper towels. This will help achieve crispy skin. Place the thighs in a large zip-top bag or a shallow dish.

        Marinate the Chicken: Pour the honey mustard marinade over the chicken thighs, making sure each piece is well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 1 hour (or up to overnight for more flavor).

          Sear the Chicken: Heat a large oven-safe skillet over medium-high heat. Add a little olive oil and carefully place the marinated chicken thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken thighs over.

            Bake in the Oven: Transfer the skillet to the preheated oven. Bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
