Ingredients
  

1 pound large shrimp, peeled and deveined

2 tablespoons honey

2 tablespoons lime juice (freshly squeezed)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

4 cups mixed greens (arugula, spinach, and romaine)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Lime wedges, for garnish

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the honey, lime juice, olive oil, garlic powder, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for about 15-20 minutes while you prepare the salad.

    Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet, cooking for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from the heat and set aside.

      Prepare the Salad Base: In a large bowl, add the mixed greens. Top with the diced avocado, cherry tomatoes, red onion, and cilantro.

        Combine Everything: Once the shrimp have cooled slightly, add them to the salad bowl. Drizzle any remaining marinade over the salad for added flavor.
