Honey Glazed Salmon Foil Packs

Ingredients
  

4 salmon fillets (6 oz each)

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

Salt and pepper to taste

1 lemon, sliced

1 cup asparagus, trimmed (you can use green beans or broccoli as alternatives)

1/4 cup chopped fresh parsley (for garnish)

4 pieces of aluminum foil (12 x 12 inches)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Marinade: In a small bowl, whisk together honey, soy sauce, Dijon mustard, minced garlic, grated ginger, olive oil, salt, and pepper until well combined.

      Prepare the Foil Packs: Lay out 4 large pieces of aluminum foil on a clean surface. Place one salmon fillet in the center of each piece of foil.

        Add Vegetables: Divide the trimmed asparagus evenly among the foil packs, placing them beside or on top of the salmon fillets.

          Add Lemon Slices: Place lemon slices on top of each salmon fillet.

            Drizzle the Marinade: Pour an equal amount of the honey glaze mixture over each salmon fillet and asparagus.

              Seal the Foil Packs: Fold the sides of the foil over the salmon and asparagus, creating a sealed packet. Make sure there's a little space for steam inside the pack.

                Bake the Packs: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                  Serve: Carefully open each foil pack (watch out for steam!) and garnish with fresh parsley before serving.
