1 lb ground chicken

3 tablespoons honey

4 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon fresh ginger, minced

1 tablespoon olive oil

1 cup bell pepper, finely diced (red or yellow for sweetness)

1/2 cup carrot, grated

2 green onions, finely sliced

1 head of butter or iceberg lettuce, leaves separated

Sesame seeds and cilantro (for garnish)

Prepare the Sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced ginger, and half of the minced garlic. Set this sauce aside.

      Add the Chicken: Add ground chicken to the skillet and cook, breaking it apart, until it’s browned and fully cooked (about 5-7 minutes). Ensure there’s no pink remaining.
