1 pound Brussels sprouts, trimmed and halved

3 tablespoons olive oil

Salt and pepper to taste

¼ cup balsamic vinegar

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon Dijon mustard

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prep Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.

      Roast Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast in the oven for 20-25 minutes, stirring halfway through, until they are tender and golden brown.

        Make the Glaze: While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan over medium heat, combine balsamic vinegar, honey, garlic, Dijon mustard, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 3-5 minutes until slightly thickened.

          Combine and Glaze: Once the Brussels sprouts are done roasting, remove them from the oven and pour the balsamic glaze over them, tossing to coat thoroughly.
