Homestyle Meatloaf with Mashed Potatoes

For the Meatloaf:

1 ½ lbs ground beef (80/20 lean)

1 cup breadcrumbs

½ cup grated Parmesan cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 large egg, beaten

½ cup milk

2 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

½ cup ketchup (for topping)

For the Mashed Potatoes:

2 lbs russet potatoes, peeled and cubed

½ cup heavy cream

¼ cup unsalted butter

Salt and pepper, to taste

Chives, chopped (for garnish, optional)

Instructions
 

Prepare the Oven: Preheat your oven to 350°F (175°C).

    Cook the Vegetables: In a skillet over medium heat, sauté the chopped onion and minced garlic until softened and slightly caramelized, about 5-7 minutes. Set aside to cool.

      Mix the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, sautéed onions and garlic, beaten egg, milk, Worcestershire sauce, dried thyme, salt, and pepper. Mix gently until well combined but do not overmix, as this can make the meatloaf dense.

        Shape the Meatloaf: Transfer the mixture to a baking dish or shape it into a loaf and place it in a greased loaf pan. Spread the ketchup evenly over the top of the meatloaf.

          Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).

            Prepare the Mashed Potatoes: Meanwhile, while the meatloaf is baking, bring a large pot of salted water to a boil. Add the cubed russet potatoes and cook until tender, about 15-20 minutes.

              Mash the Potatoes: Drain the potatoes and return them to the pot. Add the heavy cream and butter. Mash until smooth and creamy. Season with salt and pepper to taste.

                Combine and Serve: Once the meatloaf is cooked, let it rest for about 10 minutes before slicing. Serve the meatloaf slices alongside a generous scoop of creamy mashed potatoes. Garnish with freshly chopped chives if desired.
