8 oz elbow macaroni

2 cups broccoli florets (fresh or frozen)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

3 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp mustard powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

1 tbsp olive oil (optional, for topping)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbly and lightly golden. Gradually pour in the milk while continuously whisking to avoid lumps. Continue to whisk until the mixture thickens and just begins to simmer.

      Add the Seasonings: Stir in the garlic powder, onion powder, mustard powder, salt, and pepper. Cook for another minute to allow the flavors to meld.

        Incorporate the Cheese: Reduce the heat to low and mix in the sharp cheddar, mozzarella, and half of the Parmesan cheese until melted and smooth. Taste and adjust seasoning if needed.

          Combine with Pasta: Fold the cooked macaroni and broccoli into the chees sauce, stirring until fully combined and coated.

            Prepare for Baking: If you prefer a crispy topping, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13 inch baking dish.

              Optional Breadcrumb Topping: In a small bowl, mix the breadcrumbs with olive oil and the remaining Parmesan cheese. Sprinkle this mixture evenly over the top of the macaroni and cheese.

                Bake: Place the dish in the preheated oven and bake for 20-25 minutes until the top is golden and bubbly.
