Homemade Veggie Pizza Rolls

1 package (8 oz) of refrigerated pizza dough

1 cup fresh spinach, chopped

1 cup mushrooms, diced

1/2 cup bell pepper, diced (any color)

1/2 cup onion, finely chopped

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 egg, beaten (for egg wash)

2 tbsp olive oil

Marinara sauce (for dipping)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Vegetable Filling: In a skillet over medium heat, heat the olive oil. Add the chopped onion and bell pepper, sautéing until they soften (about 3-4 minutes). Add the diced mushrooms and spinach, and cook until the mushrooms release their moisture and the spinach wilts (another 3-4 minutes). Season with garlic powder, Italian seasoning, and red pepper flakes if using. Remove from heat and let cool for a few minutes.

      Roll Out the Dough: On a floured surface, unroll the pizza dough. With a rolling pin, spread it into a rectangle approximately ¼ inch thick.

        Assemble the Rolls: Spread the cooled vegetable filling evenly over the dough, leaving a small border around the edges. Sprinkle the shredded mozzarella and grated Parmesan cheese over the filling.

          Roll and Cut: Carefully roll the dough from one end to the other into a log shape. Pinch the edges to seal. Cut the log into evenly sized pieces, about 1-2 inches wide.

            Prepare for Baking: Place the rolls seam-side down on the prepared baking sheet. Brush the tops with the beaten egg to give them a golden color.

              Bake: Bake in the preheated oven for 15-18 minutes, or until the rolls are golden brown and puffed up.

                Serve: Allow the rolls to cool for a couple of minutes. Serve warm with marinara sauce for dipping.
