2 cups (250g) all-purpose flour

1 cup (250ml) lukewarm water

1 teaspoon active dry yeast

1/2 teaspoon salt

1 teaspoon sugar

1 tablespoon olive oil

For the Toppings:

1 cup (240ml) canned San Marzano tomatoes, crushed

8 oz (225g) fresh mozzarella cheese, sliced

Fresh basil leaves

1 tablespoon extra virgin olive oil

Salt to taste

Freshly cracked black pepper (optional)

Prepare the Dough: In a small bowl, combine the lukewarm water and sugar. Sprinkle the active dry yeast on top and let it sit for about 5-10 minutes until frothy.

    Mix Ingredients: In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, pour it into the bowl with flour along with the olive oil. Mix together until it begins to form a dough.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Form the dough into a ball.

        First Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for 1-2 hours or until it doubles in size.

          Preheat Oven: While the dough is rising, preheat your oven to the highest setting (ideally 475°F to 500°F or 250°C), and if using a pizza stone, place it in the oven to heat up.

            Prepare the Sauce: In a bowl, combine the crushed San Marzano tomatoes with a pinch of salt and set aside.

              Shape the Pizza: Once the dough has risen, punch it down and divide it into two equal parts. On a floured surface, shape each piece into a round pizza base (about 10-12 inches in diameter), ensuring the edges are slightly thicker for the crust.

                Add the Toppings: Spread a thin layer of the crushed tomato sauce over each pizza base. Arrange slices of fresh mozzarella on top and drizzle with extra virgin olive oil. Optionally, add fresh basil leaves, and season with salt and black pepper.

                  Bake the Pizza: Carefully transfer the pizza onto the preheated pizza stone or a baking sheet. Bake for about 8-12 minutes, or until the crust is golden brown and the cheese is bubbling.

                    Finishing Touches: Once out of the oven, add more fresh basil leaves and a drizzle of olive oil if desired. Let it cool for a minute, slice, and serve hot!
