4 cups all-purpose flour

1/2 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1 cup whole milk, warmed to 110°F

1/2 cup unsalted butter, melted

2 large eggs

1/2 teaspoon salt

For the Filling:

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

3 tablespoons ground cinnamon

1/4 cup chopped pecans or walnuts (optional)

1/4 cup raisins (optional)

For the Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (or as needed for consistency)

Instructions
 

Activate the Yeast: In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make the Dough: In a large mixing bowl, combine 2 cups of flour and salt. Add the yeast mixture, melted butter, and eggs. Mix until fully combined. Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.

      Knead the Dough: Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.

        Prepare the Filling: In a small bowl, combine softened butter, brown sugar, cinnamon, and nuts and raisins if using. Mix until well combined and spreadable.

          Roll Out the Dough: After the dough has risen, punch it down and transfer to a floured surface. Roll it out into a rectangle about 1/4 inch thick.

            Spread the Filling: Evenly spread the cinnamon filling over the dough, leaving a small border around the edges.

              Form the Rolls: Starting from one end, tightly roll the dough into a log. Pinch the seam to seal and slice the log into 12 equal pieces.

                Second Rise: Place the rolls in a greased baking dish, cover, and let rise for another 30-45 minutes, until puffy.
