Homemade Chicken Stroganoff

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 cup chicken broth

1 cup sour cream

1 tablespoon Worcestershire sauce

2 teaspoons Dijon mustard

1 teaspoon paprika

Salt and pepper to taste

3 cups egg noodles (or your choice of pasta)

Fresh parsley, chopped (for garnish)

Cook the noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside, reserving about half a cup of pasta water.

    Sauté the chicken: In a large skillet over medium-high heat, add olive oil. Once hot, add the sliced chicken. Season with salt and pepper. Sauté for about 5-7 minutes until the chicken is golden brown and fully cooked. Remove the chicken from the pan and set aside.

      Cook the vegetables: In the same skillet, add the chopped onion and sauté for about 3-4 minutes, or until translucent. Add the minced garlic and sliced mushrooms, and cook for another 5-6 minutes, until the mushrooms are browned and tender.

        Create the sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the Worcestershire sauce, Dijon mustard, and paprika. Allow the mixture to simmer for about 3 minutes.

          Finish the sauce: Lower the heat to medium-low and stir in the sour cream until well combined. If the sauce is too thick, add a bit of reserved pasta water until you reach the desired consistency. Add the cooked chicken back into the skillet and stir to coat all ingredients evenly in the sauce.

            Combine with noodles: Add the cooked egg noodles into the skillet, gently tossing everything together until the noodles are well coated in the creamy sauce. Taste and adjust seasoning if needed.
