Homemade Chicken Noodle Soup

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

8 cups low-sodium chicken broth

2 cups cooked chicken, shredded (preferably rotisserie)

1 bay leaf

2 cups egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.

      Add the dried thyme and rosemary, and mix well for about 1 minute to release the flavors.

        Pour in the chicken broth and add the shredded chicken and bay leaf. Increase the heat to bring the mixture to a gentle boil.

          Once boiling, reduce the heat to a simmer. Add the egg noodles and cook according to package instructions, usually around 8-10 minutes, or until the noodles are al dente.

            While the noodles are cooking, taste the soup and season it with salt and pepper as desired.

              After the noodles are cooked, remove the bay leaf and stir in the fresh parsley.

                Serve hot in bowls, garnished with additional parsley if desired, and enjoy your homemade chicken noodle soup!
