4 large bell peppers (any color)

1 cup crumbled feta cheese

1 cup cooked quinoa or rice (white or brown)

1/2 cup kalamata olives, pitted and chopped

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh dill, chopped (or 1 tablespoon dried)

3 cloves garlic, minced

1 teaspoon lemon zest

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup cherry tomatoes, halved (optional for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If they have a hard bottom, carefully slice a small portion off the base to create a flat surface so they can stand upright. Place the peppers upright in a baking dish.

      Make the Filling: In a large mixing bowl, combine the crumbled feta cheese, cooked quinoa or rice, chopped olives, parsley, dill, minced garlic, lemon zest, and a drizzle of olive oil. Season the mixture with salt and pepper to taste. Stir until well combined.
