Herb Butter Yukon Waffle Bossa Bread

Ingredients
  

  • 2 large Yukon Gold potatoes, peeled and diced
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup buttermilk
  • 1 large egg
  • 0.25 cup unsalted butter, melted
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 0.5 cup herb butter

Instructions
 

  • Prepare the Potatoes: In a large pot, boil the diced Yukon Gold potatoes in salted water until tender, about 15-20 minutes. Drain and allow to cool slightly.
  • Mash the Potatoes: In a mixing bowl, mash the potatoes until smooth. Set aside to cool completely.
  • Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and black pepper.
  • Combine Wet Ingredients: In a separate bowl, whisk the buttermilk, egg, and melted butter. Once the mashed potatoes are cool, mix them into the wet ingredients until well combined.
  • Combine Mixtures: Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing; the batter should be slightly lumpy.
  • Add Fresh Herbs: Gently fold in the chopped rosemary, thyme, and parsley until evenly distributed.
  • Preheat the Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions.
  • Cook the Waffles: Lightly grease the waffle maker with some oil or cooking spray. Pour about 0.625 cups of batter onto the center of the preheated waffle maker. Close the lid and cook until the waffles are golden brown and crisp, usually about 4-5 minutes.
  • Serve: Carefully remove the waffles and place them on a plate. Spread some homemade herb butter on each waffle while warm to let it melt into the deliciousness.
