Instructions

  • Prepare the Turkey Mixture: In the same pan, add the diced onion and sauté until translucent, around 3-4 minutes. Add the minced garlic and cook for an additional 1 minute. Then, add the ground turkey, breaking it up with a spoon.
  • Season the Turkey: Once the turkey has browned, sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Stir to combine everything well, then let it cook for another 5-7 minutes until cooked through.
  • Mix in Beans and Corn: Add the black beans and corn to the turkey mixture, stirring gently to incorporate. Cook for another 2-3 minutes until the beans are warmed through.
  • Heat the Tortillas: In a separate skillet, lightly toast the corn tortillas over medium heat for about 15-30 seconds on each side, until warm and pliable.
  • Assemble the Tacos: To assemble, place a generous scoop of the turkey and sweet potato mixture onto each tortilla. Top with slices of avocado, chopped cilantro, and any additional desired toppings like salsa or cheese.
