Ingredients

2 cups butternut squash, peeled and diced

2 cups carrots, sliced

1 cup parsnips, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 cup celery, chopped

2 cups vegetable broth

1 can (14 oz) diced tomatoes, with juices

1 cup green beans, trimmed and cut into 1-inch pieces

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prep the Veggies: Start by peeling and chopping all the vegetables: butternut squash, carrots, parsnips, onion, garlic, and celery. Make sure everything is evenly diced for consistent cooking.

Layer the Ingredients: In your crockpot, layer the vegetables starting with the butternut squash and followed by the carrots, parsnips, onion, garlic, celery, and green beans.

Add Liquid and Seasonings: Pour in the vegetable broth and the diced tomatoes, including their juices. Add in the thyme, rosemary, paprika, salt, and black pepper. Stir gently to combine all the ingredients.

Set and Forget: Cover the crockpot and set it to cook for 6-8 hours on low heat, or 3-4 hours on high. The vegetables should be tender and flavorful when done.

Finish with Flavor: About 15 minutes before serving, stir in the balsamic vinegar to add a layer of depth to the stew.

Serve: Ladle the stew into bowls, and garnish with freshly chopped parsley for a touch of color and freshness. Enjoy warm with crusty bread or over cooked grains for a hearty meal!
