Healthy Mediterranean Lentil Bowl

1 cup green or brown lentils, rinsed

1 medium red onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup spinach or arugula

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1 tablespoon olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Lemon wedges for serving

Cook the Lentils: In a medium pot, add the rinsed lentils and cover them with water. Bring to a boil over high heat, then reduce to a simmer. Cook for about 20-25 minutes or until the lentils are tender but not mushy. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add Vegetables: Stir in the diced red bell pepper and cook for another 5 minutes until slightly softened. Then, add the cherry tomatoes and cook until they begin to burst, about 3-4 minutes.

        Combine All Ingredients: In a large bowl, combine the cooked lentils, sautéed vegetables, cucumber, spinach (or arugula), olives, and parsley. Gently toss to mix.

          Dress the Bowl: In a small bowl, whisk together the red wine vinegar, dried oregano, salt, and pepper. Drizzle this dressing over the lentil mixture and toss again until thoroughly combined.
