2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup roasted hatch green chiles, diced (fresh or canned)

1 cup cooked brown rice or quinoa

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Marinate the Chicken: In a bowl, combine the chicken breasts with olive oil, paprika, cumin, garlic powder, onion powder, salt, and pepper. Ensure the chicken is evenly coated. Let marinate for 30 minutes in the refrigerator.
