Healthy Ground Turkey Sweet Potato Bake

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup spinach, chopped (fresh or frozen)

1 bell pepper, diced (any color)

1 small onion, finely chopped

3 cloves garlic, minced

1 tsp paprika

1 tsp ground cumin

½ tsp chili powder (optional, for a kick)

Salt and pepper, to taste

1 cup low-sodium chicken broth or vegetable broth

½ cup shredded cheddar cheese (or dairy-free cheese, if preferred)

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Sweet Potatoes: In a large pot, fill with water, add diced sweet potatoes, and bring to a boil. Once boiling, reduce heat and simmer for about 10-12 minutes until tender. Drain and set aside.

      Cook the Turkey: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 3-4 minutes).

        Brown the Meat: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, approximately 5-7 minutes.

          Add Vegetables and Spices: Stir in the bell pepper, spinach, paprika, cumin, chili powder, salt, and pepper. Cook for another 5 minutes until the spinach wilts and the bell pepper softens.

            Combine Ingredients: In a large mixing bowl, combine the cooked sweet potatoes with the turkey and vegetable mix. Pour in the chicken or vegetable broth, and mix until everything is evenly coated.

              Transfer to Baking Dish: Grease a 9x13-inch baking dish, and transfer the mixture into the dish, spreading it evenly.

                Cheese Topping: Sprinkle the shredded cheese over the top of the mixture.

                  Bake: Cover the dish with aluminum foil (to retain moisture), and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Serve: Once ready, let it cool for a few minutes. Garnish with fresh parsley before serving.
