8 large egg whites

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, diced

1/3 cup red bell pepper, finely chopped

1/2 cup low-fat shredded cheese (e.g., mozzarella or cheddar)

1/4 cup green onions, sliced

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon salt (or to taste)

Cooking spray or olive oil for greasing the muffin tin

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin by lightly greasing it with cooking spray or olive oil.

    Whisk the Egg Whites: In a large mixing bowl, whisk together the egg whites, garlic powder, black pepper, and salt until well combined and frothy.

      Add the Vegetables: Gently fold in the chopped spinach, diced cherry tomatoes, red bell pepper, green onions, and half of the shredded cheese into the egg whites. Make sure everything is evenly incorporated.

        Fill the Muffin Tin: Pour the egg white mixture evenly into each muffin cup, filling them about 3/4 full.

          Top with Cheese: Sprinkle the remaining shredded cheese on top of each filled muffin cup for an extra cheesy flavor.
