1 cup finely grated zucchini (about 1 medium zucchini)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 cup rolled oats

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted (or any neutral oil)

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Prepare the Zucchini: Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture to prevent the muffins from becoming soggy.

      Mix the Dry Ingredients: In a large bowl, whisk together the whole wheat flour, cocoa powder, rolled oats, baking soda, baking powder, salt, and cinnamon until well combined.
