2 cups rolled oats

1/2 cup almond milk (or any milk of your choice)

1/4 cup maple syrup (or honey)

2 ripe bananas, mashed

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup mixed berries (fresh or frozen)

1/4 cup walnuts or pecans, chopped (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray or line with muffin liners.

    In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix these dry ingredients together until well incorporated.

      In another bowl, whisk together the mashed bananas, applesauce, almond milk, maple syrup, and vanilla extract until smooth and combined.

        Pour the wet ingredients into the dry mixture and stir until fully combined. Be careful not to overmix; you want everything just blended.

          Gently fold in the mixed berries and the chopped nuts if you're using them.

            Scoop the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

              Place the muffin tin into the preheated oven and bake for 20-25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

                Once baked, remove the oatmeal cups from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

                  Serve warm or store them in an airtight container in the fridge for up to five days. These cups can be enjoyed on their own or with a dollop of yogurt or nut butter for extra flavor!
