4 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup roasted Hatch green chiles, chopped

1/2 cup baby spinach, chopped

1/4 cup cream cheese, softened

1 tablespoon mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons unsalted butter, softened (for spreading)

Instructions
 

Prepare the Cheese Mixture: In a medium bowl, combine the shredded cheddar cheese, Monterey Jack cheese, roasted Hatch chiles, and chopped spinach. Mix well and set aside.

    Make the Cream Cheese Spread: In a small bowl, combine the softened cream cheese, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth.

      Assemble the Sandwiches: Take two slices of sourdough bread. Spread a generous amount of the cream cheese mixture on one side of each slice. On the unspread side of one slice, pile a generous portion of the cheese and veggie mixture. Top with the second slice of bread, cream cheese side down.

        Butter the Exterior: Spread a thin layer of softened butter on the outside of both slices of bread to achieve a perfectly golden crust.

          Grill the Sandwich: Heat a non-stick skillet over medium heat. Once hot, carefully place the sandwich in the skillet. Cook for about 4-5 minutes on one side, or until golden brown. Flip and cook the other side for an additional 4-5 minutes, pressing down slightly with a spatula to ensure even grilling.
