Once your Spicy Hatch Chili Egg Scramble Cups are out of the oven, it's crucial to let them cool for a few minutes before serving. This cooling period allows the cups to set, making them easier to remove from the muffin tin without breaking. Additionally, cooling helps enhance the flavors and gives you the perfect texture, ensuring that your scramble cups are neither too hot nor too soft when you take that first bite. Allowing them to cool for about 5-10 minutes will yield the best results, creating a delightful experience with every mouthful.

Ingredients

6 large eggs

1 cup milk (dairy or non-dairy)

1 cup diced Hatch green chilies (fresh or roasted)

1 cup shredded cheese (cheddar or pepper jack)

1/2 cup diced red bell pepper

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil or cooking spray for greasing

Optional: chopped cilantro for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray to prevent sticking.

Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together. Pour in the milk and continue whisking until well combined. Season with salt, pepper, garlic powder, and onion powder.

Add Fillings: Gently fold in the diced Hatch green chilies, shredded cheese, diced red bell pepper, and chopped green onions. Mix until all the ingredients are evenly distributed.

Fill the Muffin Tin: Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full. This will allow room for the eggs to puff as they cook.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg cups are set and lightly golden on top. A toothpick inserted in the center should come out clean.

Cool and Serve: Once baked, remove the muffin tin from the oven and let the cups cool for about 5 minutes. Use a knife to gently loosen the edges before carefully removing the egg scramble cups.

Garnish: If desired, sprinkle fresh chopped cilantro on top for added flavor and presentation.

Enjoy: Serve warm as a tasty breakfast, brunch treat, or even as a snack throughout the day!
