6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup roasted Hatch green chilies, chopped (fresh or canned)

1/2 cup diced tomatoes (fresh or canned, drained)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 small flour tortillas

Olive oil spray or butter for greasing the muffin tin

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease a mini muffin tin with olive oil spray or butter to prevent sticking.

      Whisk the Eggs:

        In a large mixing bowl, crack the eggs and whisk in the milk, garlic powder, onion powder, salt, and pepper until well combined.

          Add the Fillings:

            Gently fold in the shredded cheddar cheese, chopped Hatch chilies, diced tomatoes, and chopped green onions into the egg mixture.

              Prepare the Tortillas:

                Lightly warm the flour tortillas in a microwave for about 20 seconds to make them pliable. Cut each tortilla into small rounds (approximately 3 inches in diameter) using a cookie cutter or a glass.

                  Line the Muffin Tin:

                    Place each tortilla round into the greased muffin tin, pressing down gently to form a small cup.

                      Fill the Tortilla Cups:

                        Pour the egg mixture into each tortilla cup until it’s about three-quarters full, ensuring an even distribution of fillings.

                          Bake:

                            Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and lightly golden.
