6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked sausage or bacon, crumbled

1 cup roasted hatch green chiles, chopped

1/2 cup diced bell pepper (any color)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 package of pre-made pastry cups (or make your own from flaky pastry dough)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pastry Cups: If using pre-made pastry cups, arrange them on a baking sheet as per package instructions. If making your own, roll out your pastry dough and cut it into squares to fit into a greased muffin tin. Press them snugly into each cup.

      Cook the Filling: In a large mixing bowl, crack the eggs and whisk them well. Stir in the milk, garlic powder, onion powder, salt, and pepper until combined.

        Add the Goodies: Fold in the shredded cheddar cheese, crumbled sausage or bacon, chopped hatch green chiles, diced bell pepper, and green onions. Mix until everything is evenly distributed.

          Fill the Cups: Carefully pour the egg mixture into each pastry cup, filling them about three-quarters full to allow for rising.

            Bake: Place the baking sheet in the preheated oven and bake for 18-22 minutes, or until the egg is set and the tops are slightly golden.

              Cool and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired. Serve warm and enjoy your flavorful breakfast cups!
