4 large flour tortillas

1 tablespoon olive oil

1/4 teaspoon black pepper

1/4 teaspoon paprika

Fresh cilantro leaves for garnish (optional)

Sour cream for serving (optional)

Prepare the Filling: In a medium bowl, whisk together the eggs, black pepper, and paprika until well combined. This adds flavor to the eggs.

    Cook the Eggs: Heat the olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and allow it to cook undisturbed for about 1-2 minutes until the edges start to set. Gently scramble the eggs while reducing the heat to low. Add the diced ham and continue cooking until the eggs are fully cooked, about 3-4 minutes. Remove from heat and stir in the shredded cheddar cheese until melted.

      Assemble the Rollups: Lay a flour tortilla flat on a clean surface. Spoon a portion of the ham and egg mixture (about 1/4 of the filling) onto the center of the tortilla. Top with a tablespoon of fresh salsa.
