1 cup Medjool dates, pitted

1 cup raw almonds

1/2 cup unsweetened cocoa powder

1/4 cup unsweetened shredded coconut

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup almond butter (or any nut butter)

2 tablespoons maple syrup or honey (optional, for added sweetness)

Extra shredded coconut or crushed nuts for rolling (optional)

Instructions
 

Prepare Ingredients: If your Medjool dates are hard, soak them in warm water for about 10 minutes to soften them. Drain well before using.

    Blend Nuts: In a food processor, add the raw almonds and pulse until they are finely ground but not turned into almond flour (a little texture is desirable).

      Add Remaining Ingredients: Add the soaked Medjool dates, cocoa powder, shredded coconut, vanilla extract, sea salt, almond butter, and optional maple syrup into the food processor with the almonds.

        Process Mixture: Pulse the mixture until it starts to come together into a sticky dough. You may need to scrape down the sides of the processor a few times to ensure everything is well combined.

          Shape Balls: Once the mixture is ready, use your hands to roll it into small balls, about 1 inch in diameter.

            Optional Coating: If desired, roll the balls in shredded coconut or crushed nuts for a nice exterior.

              Chill: Place the balls on a parchment-lined tray and chill in the fridge for at least 30 minutes to firm up.
