Grilled Zucchini Caprese Stackers

2 medium zucchinis

1 cup fresh mozzarella balls (bocconcini), drained

1 large ripe tomato, sliced

½ cup fresh basil leaves

3 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and freshly cracked black pepper, to taste

Optional: A pinch of red pepper flakes for a hint of heat

Prepare the Zucchini:

    Wash the zucchinis and slice them into ¼-inch thick rounds.

      Grill the Zucchini:

        Preheat your grill or grill pan over medium heat. Brush both sides of the zucchini slices with olive oil and sprinkle with salt and pepper. Grill each slice for about 3-4 minutes on each side, or until they have nice grill marks and are slightly tender. Remove them from the grill and set aside.

          Assemble the Stackers:

            On a serving platter, start assembling your stackers by placing a grilled zucchini slice as the base. Top it with a slice of tomato, a basil leaf, and a mozzarella ball. Repeat the layers (zucchini, tomato, basil, mozzarella) until you reach your desired height, finishing with a zucchini slice on top.

              Drizzle and Garnish:

                Once all stackers are assembled, drizzle them liberally with balsamic glaze. If desired, add a pinch of red pepper flakes for some extra heat and sprinkle a bit more salt and pepper to taste.
