3 medium zucchinis, sliced into ½-inch thick rounds

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

12 ounces fresh mozzarella, sliced into rounds

2 large tomatoes, sliced into rounds

1 cup fresh basil leaves

Balsamic vinegar, for drizzling

Optional: balsamic glaze, for garnish

Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

    Prepare the Zucchini: In a large bowl, toss the zucchini slices with olive oil, salt, and pepper until well-coated.

      Grill the Zucchini: Place the zucchini slices on the grill. Grill for about 3-4 minutes on each side, or until they have nice grill marks and are tender. Remove them from the grill and set aside to cool slightly.

        Layer the Salad: On a large serving platter, start layering by alternating slices of grilled zucchini, fresh mozzarella, and tomatoes. Overlap them slightly to create an appealing pattern.
