Ingredients

4 medium zucchinis

1 pound ground turkey sausage (mild or spicy, based on preference)

1 cup cherry tomatoes, halved

1 small yellow onion, diced

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions

Prepare the Zucchini: Preheat the grill to medium heat. Cut each zucchini in half lengthwise and scoop out the center using a spoon, creating a boat shape. Lightly brush the insides with olive oil and season with salt and pepper.

Cook the Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the Sausage: Increase the heat to medium-high and add the ground turkey sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 6-8 minutes.

Mix in Vegetables: Stir in the halved cherry tomatoes and Italian seasoning. Cook for an additional 3-4 minutes until the tomatoes are slightly softened and incorporated. Remove from heat and stir in half of the mozzarella cheese.

Stuff the Zucchini: Spoon the sausage and vegetable mixture into each zucchini boat, packing it in gently. Top with the remaining mozzarella cheese.

Grill: Place the stuffed zucchini boats on the grill, cut side up. Close the lid and grill for 15-20 minutes or until the zucchinis are tender and the cheese is melted and bubbly.

Serve: Remove from the grill and let them cool slightly. Garnish with fresh basil or parsley if desired. Serve warm and enjoy your delicious grilled zucchini boats!
