2 cups bell peppers (mixed colors), chopped

1 cup zucchini, sliced

1 cup yellow squash, sliced

1 cup red onion, chopped

1 cup cherry tomatoes, halved

3 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Aluminum foil (for wrapping)

Instructions
 

Prepare the Vegetables: Start by washing and chopping all the vegetables into bite-sized pieces. Ensure they are not too small to avoid them falling through the grill.

    Mix the Marinade: In a large bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, dried thyme, salt, and pepper. Stir well to create a dressing.

      Combine Veggies and Marinade: Add the chopped vegetables into the bowl with the marinade. Toss gently until the veggies are well coated in the seasoning mixture.

        Create Foil Packets: Cut four large pieces of aluminum foil (about 12x12 inches). Divide the marinated veggies equally among the foil pieces. Fold the edges of the foil together to create a sealed packet.

          Preheat the Grill: Heat your grill to medium-high heat.

            Grill the Veggie Packets: Place the packets directly on the grill grates. Cook for about 15-20 minutes, turning occasionally, until the vegetables are tender and slightly charred.

              Serve: Carefully remove the packets from the grill (they will be hot!) and open them carefully to avoid steam burns. Serve the grilled veggies as a side dish, or toss them with cooked grains or pasta for a complete meal.
